Pan-Fried Cinnamon Peaches on Greek Yoghurt

 

Serves 2

Ingredients

2 ripe peaches, halved and sliced
1 tsp extra virgin olive oil or a small knob of butter
1/2 tsp ground cinnamon
1 tsp honey or maple syrup, optional
1 cup Greek yoghurt
1 tbsp chopped pistachios or almonds, optional

Method

Heat the olive oil or butter in a non-stick frying pan over medium heat. Add the peach slices in a single layer and sprinkle over the cinnamon. Cook for 2 to 3 minutes on one side, then turn gently and cook for another 1 to 2 minutes until softened and lightly caramelised. Drizzle with honey or maple syrup if using and let it bubble briefly in the pan. Spoon the Greek yoghurt into serving bowls, top with the warm peaches and finish with pistachios or almonds if using.
