- Garlic Broccoli with Flaxseed and Almonds
Serves 2-4
Ingredients
1 head broccoli, cut into florets
1 tbsp extra virgin olive oil
2 garlic cloves, finely chopped or crushed
1 tbsp flaxseed
2 tbsp almonds, roughly chopped
Sea salt and pepper, to taste
Method
Bring a saucepan of water to the boil or prepare a steamer. Steam or blanch the broccoli for 2 to 3 minutes until bright green and just tender, then drain well. Heat the olive oil in a large frying pan over medium heat. Add the garlic and cook for about 30 seconds until fragrant, being careful not to let it burn. Add the broccoli and toss well so it is coated in the garlic oil. Sprinkle over the flaxseeds and chopped almonds, season lightly with sea salt and pepper, and cook for another minute to warm everything through. Transfer to a serving dish and serve warm.
