Mango and Papaya Electrolyte-Boosting Coconut Jelly with Pomegranate

Serves: 2

Ingredients:

  • 2 cups fresh coconut water
  • 2 tsp agar-agar powder
  • ¼ cup chopped mango or papaya
  • Squeeze of finger lime or lime
  • Coconut or Greek yogurt, and pomegranate or berries for serving (optional)

Method:

  1. Heat coconut water and agar-agar in a saucepan, stirring until dissolved.
  2. Pour into a dish, add fruit, and let set in the fridge for 2 hours.
  3. Serve with a squeeze of lime juice and a dollop of coconut or Greek yogurt. Top with pomegranate or berries if desired.
