- Collagen-Packed Pancakes with Nut and Cacao Crumble and Berries

Serves: 2
Ingredients:
- ½ cup wattle seed flour or almond flour
- 1 scoop collagen powder
- 1 egg
- ¼ cup unsweetened macadamia milk or milk of choice
- ¼ tsp baking soda
- ¼ tsp cinnamon
Nut Crumble Ingredients:
- ½ cup crushed nuts (walnuts, almonds, cashews)
- 1-2 tbsp cacao nibs
- 1-2 tbsp raw honey
Method:
- Mix dry and wet ingredients separately, then combine to form a batter.
- Cook in a non-stick pan with a little extra virgin olive oil or butter for 2 minutes on each side.
- In a bowl, mix the nut crumble ingredients.
- Serve pancakes with berries and nut crumble, drizzled with raw honey.
